I used to be quite the sucker for the drive-thru breakfasts before classes when we used to actually go to classes. A good egg McMuffin and hash brown was always a delicious way to start the day. Now that I am at home every day I was able to make a healthier version of this breakfast which left me feeling much less greasy but was equally delicious.
I first started by deciding how I would make the hash brown I usually have healthier. I decided to swap out the hash brown for some cooked veggies on the side. I eat this as a side for my breakfasts often and it is honestly such a great substitute for hash browns. So I started by chopping up some zucchini and putting it into a pan with some butter to cook on low while covered.
I then chopped up some tomato and left them to the side as I waited for the zucchini to soften more.
I then cut up some red onions and tomato slices so that I would have them ready to put on my egg McMuffin.
Once my zucchini had softened enough I added my previously chopped up tomatoes and continued to cook these both on low while covered.
As my side cooked I cut up two slices of cheese to put on my egg McMuffin as well.
Once my side had cooked enough I added my egg, turned up the heat, and broke the yolk so that it wouldn’t be too runny for my sandwich. I also added some salt and pepper to everything in the pan.
As the egg was cooking I put my English muffin in the toaster and toasted it.
I then added my cheese slices to my egg and melted it.
Once the cheese had melted a bit I folded my egg over the cheese.
Once my English muffin was toasted I add all my toppings and added some ketchup and a little bit of mustard.
I then was able to add my egg to my sandwich and put it all together.
I then got my veggie mix out of the pan and plated everything.
This was so delicious and made for a great breakfast. It is also much healthier than a regular egg McMuffin and hash brown as usually, they have some type of processed meat and processed cheese. The meat always adds quite a large amount of sodium and the processed cheese honestly just tastes bad. The hashbrowns that usually come on the side have been substituted with some pan-fried veggies which are much healthier than a deep-fried hashbrown.
Overall this was so tasty and I would definitely choose this over any egg McMuffin meal.
